I bring three pairs of shoes at the very most when I travel, and usually that's plenty. The point of this list is to give you options depending on your style, your itinerary, and how much walking you're going to be doing.
For me, the perfect travel shoe lineup is usually one really comfortable walking shoe, one stylish sneaker, and a sandal.

Reebok Club C 85
If you want one sneaker that will basically go with everything, this is it.
The Reebok Club C 85 has that clean, simple look that I love for travel. It's not overly sporty, and the classic white leather works with just about anything in your suitcase.
I especially like it with straight-leg jeans, wide-leg pants, and casual dresses.
This is the sneaker I'd choose if I wanted something that looked polished without looking like I was trying too hard.

I also think a platform sneaker looks especially good with wide-leg jeans and longer pants, which makes this one a great option if that's your go-to travel uniform.

There are so many colors and combinations that you can actually use your shoes to add some personality to a pretty neutral travel wardrobe.
New Balance 327
Without a doubt, these are my most comfortable shoe. When I know I have a good 20,000 steps in day (hello Rome), this is what I wear. This is one of my personal favorites for travel.
The New Balance 327 has a more substantial sole than the Sambas and Gazelles, so it feels much more like a walking sneaker while still looking cute with everyday outfits.
It's also one of those shoes that doesn't require a perfectly styled outfit. Jeans + sweater + 327s? Done.

The 530 is another great choice if you want something comfortable that still feels current.
It's definitely more of a "sneaker" sneaker than the Reebok Club C or Samba, but that's exactly why I like it for travel.

If you're looking for a sneaker that feels a little more European and a little less like an athletic shoe, I really like the VEJA Recife.
The three Velcro straps are what make it stand out. They're simple, but they give the shoe a little more personality than a basic white sneaker. And honestly, I love that there are no laces to deal with. They're easy to slip on and off at the airport, too.

And if you're only bringing ONE pair:
I'd choose the New Balance 327.
It's the best balance of comfort and style for the way I travel. I want to be able to walk around all day without feeling like my feet are going to revolt, but I still want my shoes to look good in photos.

A Few Things I'd Keep in Mind
Don't take brand-new sneakers to Europe.
I don't care how comfortable they are supposed to be. Break them in first.
Don't assume a cute sneaker is a walking sneaker.
There's a difference between a shoe that is comfortable for running errands and one that you can wear for eight hours of sightseeing.
Think about your entire suitcase.
I would much rather have one sneaker that works with six outfits than a pair that only works with one.
Don't pack a different shoe for every outfit. Im always a carry-on only girl, and you can be too!
